Known for its unique yellowish-green color and taste, this is one fried recipe you’ll want to make over and over again.
Although they share some similarities, (Rice, vegetables, fried). Nigerian fried rice recipe is quite different from Asian fried rice in both preparation and in taste. We omit the egg, soy sauce, also, original Nigerian fried rices uses parboiled long grain rice as oppose to jasmine rice.
Traditionally served with coleslaw, chicken or beef and fried plantain.
How to make Nigerian fried rice

Nigerian fried rice is very versatile and easily adaptable to additions. For example, you could jazz it up by adding chopped up fried chicken, chopped beef, pork, fried shrimps, fried sausages, etc. We haven’t forgotten about the vegetables; broccoli, snap peas, cauliflower, and other vegetables works great with this recipe too.
Ingredients
To cook meat
- 1.2 kg chicken
- 1 Thumb sized ginger( chopped or minced)
- 3 cloves garlic chopped
- 1 small onion chopped
- 1 tsp salt
- 2 knorr chicken cube
- 1½ tsp curry powder
- 1 tsp dried thyme or 3 stems fresh thyme
- ½ cup water
for the rice
- 3 cups basmati rice sella basmati or parboiled rice (see note 2)
- 2 cups meat stock
- 1 cup water
- 2 tsp curry powder
- 1 tsp salt
- 1 tsp white pepper optional
- ½ bell pepper
veggies
- 1 bunch sacllions
- 1 medium carrot
- 1 medium green bell pepper
- ½ cup green peas
- ¼ cup sweet corn frozen or canned
- handful green beans
- ½ tsp each: salt, garlic powder, curry, thyme
- 2 tsp white pepper or cayenne pepper
- 1 chicken cube
other ingredients
- ½ cup shrimp cooked and fried see note 1
- ⅓ cup beef liver cooked, diced and fried
- 3 tbs vegetable oil
Instructions
- In a medium pot, cook meat with the ingredients listed, boil for 15 -20 minutes. While meat is boiling, prepare your other ingredients.
- When meat is cooked, separate meat from stock, fry, grill for airfry the meat.
- Filter the meat broth, return broth back to pot, add washed rice, salt, pepper, curry and bell pepper chunks. Allow rice to boil until cooked but not completely soft. Fluff up, turn off heat and set aside.
- Mainwhile, devein and fry shrimp, add a sprinkle of salt and pepper to taste. also, boil, dice and fry liver if using.
- In a large wok or saucepan, heat up vegetable oil, fry vegetables starting with the carrots and green beans, add the other vegetables, and salt and the other spices, fry for 6-8 minuets.
- Add cooked shrimp, liver, rice, stirfry for about 5 minutes then add chopped scallions(spring onions).
- Stry fry fried rice for 5-8 minutes for the ultimate tasty fried rice and serve with coleslaw, fried meat and fried plantain.
Notes
- Cook in boiling water seasoned with salt, seasoning cube. Cook for about 5 minutes.
- Remove from water when cooked.
- Dice cooked liver into cubes
- Heat oil up in a pan, fry liver on low heat for 5-8 minutes. Transfer to paper towel to drain excess oil.

Medical staff on the front line of the battle against mpox in eastern Democratic Republic of Congo have told the BBC they are desperate for vaccines to arrive so they can stem the rate of new infections.

Mpox – formerly known as monkeypox – is a highly contagious disease and has killed at least 635 people in DR Congo this year.
Even though 200,000 vaccines, donated by the European Commission, were flown into the capital, Kinshasa, last week, they are yet to be transported across this vast country – and it could be several weeks before they reach South Kivu.
“We’ve learned from social media that the vaccine is already available,” Emmanuel Fikiri, a nurse working at the clinic that has been turned into a specialist centre to tackle the virus, told the BBC.
He said this was the first time he had treated patients with mpox and every day he feared catching it and passing it on to his own children – aged seven, five and one.
“You saw how I touched the patients because that’s my job as a nurse. So, we’re asking the government to help us by first giving us the vaccines.”
The reason it will take time to transport the vaccines is that they need to be stored at a precise temperature – below freezing – to maintain their potency, plus they need to be sent to rural areas of South Kivu, like Kamituga, Kavumu and Lwiro, where the outbreak is rife.
The lack of infrastructure and bad roads mean that helicopters could possibly be used to drop some of the vaccines, which will further drive up costs in a country that is already struggling financially.
At the community clinic, Dr Pacifique Karanzo appeared fatigued and downbeat having been rushed off his feet all morning.
Although he wore a face shield, I could see the sweat running down his face. He said he was saddened to see patients sharing beds.
“You will even see that the patients are sleeping on the floor,” he told me, clearly exasperated.
“The only support we have already had is a little medicine for the patients and water. As far as other challenges are concerned, there’s still no staff motivation.”
