peppered turkey

Ingredients 

  • 6 turkey wings
  • 1 small onion
  • 4 cloves garlic
  • 1 teaspoon salt
  • 2 teaspoons crushed chicken bullion cubes knorr or maggi
  • 1 teaspoon curry powder
  • few sprigs fresh thyme or 1 tsp dried thyme
  • ½ teaspoon ginger powder
  • 1 cup water

pepper mix

  • 2 medium bell pepper
  • 4-5 scotch bonnet pepper add or reduce depending spice tolerance
  • ½ small onion

sauce

  • ½ cup oil canola or vegetable oil
  • 1 small onion sliced thin
  • few leaves basil skip if unavailable
  • 3-4 cloves garlic minced
  • pepper mix see above
  • 1 teaspoon crushed bullion
  • ½ teaspoon salt
  • ½ teaspoon curry powder
  • 4-5 sprigs fresh thyme or 1 tsp dried thyme
  • 1 small green bell pepper sliced
  • 2 green onion/spring onion
  • 2-3 tablespoons turkey broth or water

Instructions

Cook the wings

  • Add turkey wings to a large pot, add the chopped onion as well as the spices listed above.
  • Add a little water, mix and allow the wings steam and for about 10 minutes.
  • after about 10 minutes, add the remaining water and cook for an additional 10 to 15 minutes.
  • while the turkey cooks, coarsely blend the bell peppers, scotch bonnet and onions
  • check on the turkey, separate the meat from stock and fry the turkey in oil of choice. You can also grill or airfry for a healthier alternative.
  • transfer the fried turkey to a paper towel to remove excess oil.
  • reduce the frying oil, return back to heat and add in thinly sliced onions, few fresh basil leaves and minced garlic. Fry for 5 minutes.
  • add the pepper mix, fry for about 10 minute then add in the fried turkey
  • add in the sliced green peppers, green onions and a little turkey broth
  • cover and allow to simmer for 5 to 8 minutes.
  • serve with white rice or enjoy by itself.
